CHEF JEFF: GREENS, grilled shrimp& gratitude


Enjoy this scrumptious combination of flavors. You will be grateful that you tried this recipe!


A 5oz container of lettuce is four servings


Ingredients:

Any Mixed Dark Lettuce Greens (no Iceberg please!) - Clean and then tear into bite size pieces.

1/4 cup Raw Slivered Almonds

1/4 cup Raw Sliced Almonds

10 Red Grapes (sliced in half)

2 Tbsp Hemp Seeds

2 Tbsp Kale Chip Crumbs (Brad's Vampire Killer)

1/2 cup Crumbled Feta Cheese

Olive Oil

Lemon Olive Oil or Squeeze of Fresh Lemon

White Wine Vinegar

And… Chef Jeff’s Grilled Shrimp!


Prepare the Grilled Shrimp following the recipe in the above link. Allow for a few hours to cool. Cut shrimp in thirds or quarters depending on size and set aside.


In mixing bowl start with the lettuce

Add the "dry' ingredients and toss

Sprinkle the crumbled feta cheese, grilled shrimp pieces and toss

At your discretion on amounts, top with the following:

Olive Oils (or lemon)

White Wine Vinegar


Toss well, serve with Corn on Cob and Chef Jeff's Sweet Potato Fries
