Parmesan Zucchini Sticks

Simple. Delicious. Healthy. With just a touch of Parmesan cheese for the Yum-factor!



Each average Zucchini usually yields about 8 sticks, so consider how many total pieces you will want.


Begin by washing the Zucchini thoroughly, and then cutting to yield quarters (or sticks).


Lay the cut pieces out on a parchment lined baking sheet.


In a separate bowl combine:

½ cup of Grated or shredded Parmesan Cheese

1 TSP of Oregano

¼ TSP Garlic Powder

Salt & Pepper


Coat each Zucchini Stick with Extra Virgin Olive Oil and then sprinkle the Parmesan mixture over each one, turn each over and sprinkle again.


Bake for 10 minutes @350 degrees. Remove from oven. Let sit for a few minutes.


Sprinkle with Parsley, serve and enjoy!


WHY EAT ZUCCHINI?

Zucchini contains a variety of vitamins, minerals, and beneficial plant compounds. Cooked zucchini is particularly high in vitamin A, though raw zucchini contains slightly less. Also a great source of Fiber and has a higher water content to help fill you up!
